Brown Sugar Ginger Cookies
1 cup shortening
2 cups brown sugar, packed
2 eggs
2 3/4 cups sifted flour
2 tsp ground ginger
1 tbsp baking powder
Cream shortening, sugar and eggs until very fluffy. Sift flour, ginger and baking powder; stir into creamed mixture well. Roll into 1" balls; roll in granulated sugar. Place on greased cookie sheets and press down gently with drinking glass dipped in the granulated sugar. Bake at 350 for 12 minutes. Remove from pans onto wire racks while still warm.
