Chinese Chews
1/2 cup chopped cherries
1 cup chopped dates
1 cup chopped nuts
1 cup sugar
1 cup flour
1 tsp baking powder
1/8 tsp salt
2 eggs, well beaten
4 tbsp butter
1 tsp vanilla
Mix and sift dry ingredients, then the chopped fruits, then the eggs, melted butter and vanilla. Mix well, turn into a buttered pan, 8x8 and bake in moderate oven about 20-25 minutes. When baked and slightly cooled, cut into finger lengths and roll in icing sugar or in fine white sugar.
