Crumb Coffee Cake
2 3/4 cups flour
1 1/2 cup sugar
4 tsp baking powder
2 tsp salt
1 tsp nutmeg
2 tsp cinnamon
2/3 cup chilled shortening
2 eggs, well beaten
1 1/4 cup cold water
2 tsp instant coffee
1 tsp vanilla
3/4 cup chopped nuts
Preheat oven to 350. Grease a 9" square cake pan. Sift together flour, baking powder, salt and spices into a large bowl. With pastry blender, cut in shortening until mixture crumbles. Reserve 2/3 cup of crumb mixture for top. To remaining mixture add combined beaten eggs, instant coffee dissolved in the water and vanilla. Mix lightly. Pour into pan, add chopped nuts to reserved crumb topping, sprinkle on top of cake. Bake 45-55 minutes. Serve warm.
