Angel Food Cake
3/4 cup sifted cake flour
10-12 egg whites
1/4 tsp salt
1 tsp cream of tartar
1 1/4 cups sifted granulated sugar
1 tsp vanilla
Sift flour, measure, add salt to whites of eggs and beat well. When foamy, add cream of tartar, beat until stiff but not dry. Fold in sugar, a little at a time, then the vanilla. Fold in flour a little at a time until all is used. Pour into ungreased angel food pan and bake slowly for 1 hour, 275 gradually increasing to 325 after 30 minutes.
