Glazed Date Fans (Bun Dough)
Date Filling:

2 cups dates
3 tbsp sugar
vinegar or lemon juice

Cook until thick, then cool. Brush fans with egg white slightly beaten mixed with 1 tbsp water and sprinkle with a mixture of 1 tbsp sugar and cinnamon. Roll each portion into a 12" round, spread half of each round with 1/3 the filling, fold dough over filling, spread half of each semi-circle with remaining filling and fold dough over to cover. Place on greased cookie sheets. Grease tops, using back of knife, mark radiating spokes on top of dough cover. Deepen marking before brushing fans to put in medium hot oven at 375 for 30 minutes.
