Dark Fruit Cake |
1 1/3 cups mincemeat 1 15 oz can of evaporated milk 1 egg, beaten 3/4 cup flour 1/2 tsp soda 2 cups mixed peel (or 2 cups mixed fruit) 1 cup walnuts, coarsely chopped 1/2 cup glazed cherries |
Add milk to mincemeat and egg. Blend well. Sift flour and baking soda together and add mixed peel, nuts and cherries. Toss lightly to coat fruit and nuts with flour. Add flour and fruit to first mixture, stir until blended. Pour into greased 9x9x3 loaf pan lined with heavy brown paper and greased again. Round tins may be used - prepare the same way. Bake at 350 for 2 hours. If using a glass dish heat to 325. |
