Rhubarb Cake |
1 1/2 cups brown sugar 1 cup margarine 1 egg 1/2 cup scalded milk 2 cups flour 1 tsp soda 1/4 tsp salt 1 tsp vanilla 2 cups diced rhubarb or more |
Cream together sugar, margarine and eggs. Add vanilla. Add dry ingredients with milk. Add rhubarb and mix. Pour into 9x13 pan. Sprinkle 1/2 cup sugar and 2 tbsp cinnamon over it. Bak at 325 for 30 minutes or longer. |
