German Hot Potato Salad
4 medium potatoes
2 slices of bacon
1 onion, chopped
1 tbsp flour
1/2 cup water
1/4 cup vinegar
2 tbsp sugar
1/2 tsp salt
1/4 tsp pepper
2 tbsp chopped, fresh parsley
Cook potatoes in their skins until tender. When potatoes are almost ready, cook bacon in frying pan until crisp. Drain on paper towels. Discard all but 2 tbsp of bacon drippings, stir onion into drippings and cook until tender over medium high heat. Sprinkle with flour and cook briefly, stirring constantly. Add water and vinegar, stir until mixture comes to a boil and thickens. Stir in sugar, salt and pepper. Remove from heat. Cover to keep warm. Peel and slice potatoes while still warm. Place in a large bowl, add the dressing, toss lightly to coat. Sprinkle with parsley and chopped bacon. Serve warm, makes 4 servings.
