Bread - (Sponge Method) |
4 cups lukewarm water 1 envelope yeast 1 tsp sugar 4 tbsp sugar 18 cups flour 2 cups milk 3 tbsp shortening 1 tbsp salt |
Put 1 cup lukewarm water into bowl, add yeast and 1 tsp sugar. Stir and let stand 10 minutes. Dissolve 4 tbsp sugar in remaining 3 cups of water and add to yeast. Add 6 cups of flour to make a sponge. Beat well, cover, let stand in warm place for 2 1/2 hours. When well risen add lukewarm water and milk, add shortening, salt and remaining flour. Let rise until double in bulk, about 1 1/2 hours. Ready to fill your bread pans. |
