Pickled Beets
small beets
2 cups vinegar
2 cups water
1 to 1 1/2 cups sugar
1 tbsp whole cloves
1 tbsp pickling spice
1 mustard seed
Bring this brine to a boil and allow to boil 5 minutes. Pack beets firmly in jar and fill with brim overflowing. Seal lightly.
